- 摘要:以辅料代替麦芽制造啤酒的主要问题是辅料使麦汁成分发生了改变。该文对常用辅料在麦汁成分上的影响进行了研究。研究表明,将添加量从5%增加到20%.高梁和玉米辅料比大麦辅料产生较多的游离氨基酸和肽,特别是高梁能够产生较多的肽。高氦大麦中总氦的可溶性氦的水解大于低氦大麦。
